PAX was founded in December 2018 by Kirstin and McKinley in Westport.

Kirstin and McKinley decided to do something about the lack of options for packaging-free organic food and personal care items. Tiffanie and Jan have been integral to helping us scale up and serve our community.

McKINLEY

McKINLEY

McKinley grew up in Kentucky, and has since lived and worked in Mexico and Germany, traveled extensively to other countries and studied an MSc at SOAS in the UK. She is now very happy to be settled with her family close to the sea, mountains and green fields to promote organic food, sustainability and art with very nice people. She is honoured to be an active member of the Edible Landscape Project, and to speak about minimal waste and sustainable business frequently.

Kirstin grew up in the west of Ireland foraging and living a sustainable life without even realising this was unusual. Always taking a great interest in food and flavours, she owned and ran her restaurant, The Quay Cottage, in Westport for many years. The horror of climate change and the plastic nightmare was the seed that became PAX where we try to help people live a more sustainable lifestyle and discover the joys of waste free shopping.

Jeanine grew up in Switzerland where she studied social care. She has always had a passion for the beauty of nature and its wildlife. Here in Ireland she enjoys being able to live and share a more sustainable lifestyle with others. In her spare time she loves crafting, hiking and doing yoga; she makes the lovely A Crafty Mind cards.

Born in the west of France, Tiffanie studied Environmental Communication in Nice University. In 2012 she did work experience in Mayo and fell in love with the wild Irish landscapes. She has always been deeply passionate about sustainability and believes in the power of individual actions. She likes volunteering with endangered species, crafts and the great outdoors.
